ポリフェノール
 ポリフェノール（Polyphenol)とは、ベンゼン還の水素の一つで、水酸基に置換した物質のことをいいます。また、水酸基を２個以上有した物質を多価フェノール（ポリフェノール）といいます。この物質はコーヒーやお茶などのカテキン類、クロロゲン酸などに多く含まれています。また、ブドウ、ナス、イチゴなどの色素はポリフェノールの化合物です。このポリフェノールは血液中のコレステロールを低減させたり、抗酸化剤として作用するのでポリフェノールを定期的に飲んでいれば長生きできるのではという期待もあります。
