 アレルギー物質の表示とは、過敏症やアレルギーを起こす原因となる物質を含む食品で健康が損なわれることを防ぐために、加工商品には原材料の表示をすることが義務付けられました。過去の例で呼吸困難や血圧低下などの健康に悪影響をあたえた食品５つを（そば、卵、落花生、卵、小麦）が加工食品に含まれている場合、特定原材料として表示を義務付けられました。表示することを義務付けられた食品（キュウイ、サケ、桃、マツタケ、リンゴ、ゼラチン、イカ、イクラ、アワビ、エビ、大豆、鶏肉、ヤマイモ、サバ、カニ、オレンジ）
